Hayyyyy, I've just come into the back end of this.  Yeah, Steve's right.  It's designed to confuse, not shorten.

Although I'm not a true Cockney, my dad, grandfather and great-grandfather were.

Cockney rhyming slang was almost always abreviated itself.  So "Butchers" was the shortened version of Butcher's Hook.  Translation:- look.  Hence Steve's "apples -".

Whilst trying to work that out, try "I'm going down the frog to the rub for a cows a* pigs".   * is "of" but the spelling doesn't fit the sound.
