Probably because of the font you're using in your email client.  If 
you're really concerned about it, send all your message in straight 
ASCII, and not RTF or HTML.  Sometimes the font you're using isn't 
supported by all systems, so characters that are "unknown" (in terms of 
the specific type) will come out as question marks, or some other 
character that the program does know.
