  That effect is produced by the dope when tautening the fabric, so the upper covering wants to descend to the trailing and leading edges level when shrinking (it would go down to the straight line connecting the wing edges, but the fabric being attached to the ribs prevent it to do so). 
  On the underside, the covering also wants to descend to the edges level, so the fabric sags between the ribs. All this is due to the ribs upper and lower curvatures.

  I agree, but this effect is very subtle and depends on the rib spacing, closer ribs reducing the fabric sag and viceversa.
