Fiction:
"Winged Victory" and "The Blue Max", already mentioned. But if you would 
like to straggle with the infantry, I can reccomend "Men and War" by Andreas 
Latzko (an Austro-Hungarian writer that has some very harsh stories) and "Le 
Main Coupee" (the severed hand) by Blaise Cendrars. these two can show you a 
very different view to authority, sacrifice and bravery as depicted by 
British, German or American writers.
