I'll just mention the ones on-topic.

The first one I tried to get as accurate as possible, with the first
Sopwith Strutter I finished the 1.A2 finished in SOP 287 markings.  My
first on-topic build was an Airfix Albatros D.Va, finished as one of
Richtofen's, before I knew it was inaccurate and before I knew everyone
else builds Richtofen's aircraft. ;-)
