Two suggestions:

Fokker D.VII (Esci or Revell, I don't know which is best.) Almost no
rigging, good basic kits, and infinite variety of paint schemes so you're
collection can always use another one. Postwar schemes were attractive
and usually simple. Maybe USAAC?

Revell Sopwith Triplane. Again almost no rigging, this time very
finite variety of paint schemes, but simple and a very cute little kit.
